Crispy Delicious Potato Latkes
Who says you can't have delicious crispy things on the Paleo diet!? These Latkes will knock your socks off and you'll be screaming for more!
It's really endless with what you can serve them with! You can use it as your bread for Eggs Benedict or serve them with apple sauce and pork chops!
The trick is to make sure you draw all of the moisture out of the potatoes! It takes a bit but do not skip that step! I like to add mind to a strainer and I squeeze the liquid out and then lay the Grated Potatoes on paper towels for 20 minutes.
RECIPECrispy Delicious Potato Latkes
Servings (10-12 Latkes)
2 Russet Potatoes
1 Sweet Onion
1 tsp Baking Powder
1/4 C Cassava Flour
1 tsp Salt
1/2 tsp Pepper
4-6 tbsp Butter
1/2 Cup Olive Oil
Start off by Grating your onion then add to a fine mesh strainer or cheese cloth and squeeze out all of the moisture. Once dry, add to a medium sized bowl.
Now peel and grate your Potatoes and add to the strainer or cheese cloth and squeeze with everything you have baby! Make sure it's super dry. Once drained, lay out the Grated potato on a single layer on paper towels and let sit out for 10-20 min. I then like to repeat the first step by adding it in the strainer again to ensure all moisture is gone.
Add your dried Potatoes to the bowl with the onions. Add in the Cassava Flour, Baking Powder, the egg, Salt, and Pepper and give a good mix.
Now get a frying pan out and have the temp at Medium High. Add in the 1/4 cup of Olive Oil and 2 tbsp Butter and let it get hot.
add in a spoonful of batter and push down to create a thin Latke (TIP: you could also use a small ice cream scoop if you have it)
Cook for 4-5 minutes per side until they have a nice crisp on them. Make sure you are adding in more oil and butter as needed after each batch of cooking.
Let cool for a bit then begin to stuff your face with these Potato Latke delights!!!
