Butternut Squash Hummus Plate served with Roasted Veggies and Blackened Chicken


Need a healthy dish idea to make to warm the soul?  Did you answer yes? well i have you covered. This hummus will smack you in the face with some mouthwatering flavor and texture. 

This dish is a comfort food dream land and the hot Butternut Squash Hummus paired with the beautiful Roasted Veggies will give you that warm and fuzzy feeling inside.  Now lets dive in and get to the fun stuff!



Butternut Squash Hummus

Servings 4-6


1 Butternut Squash

10 Scallions 

1 Cup chopped Cashews


Extra Virgin Olive Oil





Cut Butternut Squash in half lengthwise and remove pulp and seeds.  drizzle with olive oil and honey then sprinkle with salt and pepper.  Make sure to give the squash a nice massage to make sure all of the ingredients are worked in.  

Bake face side down at 350 for 1 hour.  

While that is baking, Use a Grill Pan or regular pan to grill your scallions until they have a nice char on them (2-5 minutes) then set aside.

Add one cup of roasted cashews to a food processor or blender, then drizzle in olive oil until it creates almost a peanut butter like texture.  Once done, scrape this into a bowl and set aside.

Once the Squash is done baking, add the roasted squash to the bowl you put the cashew mixture in and include the delicious honey and olive oil that is left over in the squash and pan. Chop up the cooked scallions and add those to the bowl.  Squeeze in half of a lemon and sprinkle generously with salt and pepper.  Give this a nice mix and then add to a blender or food processor.  Drizzle in olive oil until the mixture starts to blend.  This will be finished when its a smooth silky texture.  

Tip: this took me a bit to get a nice blend on.  I stopped a few times to give it a nice mix and to make sure the olive oil was incorporated. just continue to drizzle in olive oil until a nice puree forms.


Roasted Veggies

Servings 1-2 (double or triple up on the veggies if wanting more servings)


Two Stalks Broccoli

1 Zucchini

2 Large Carrots

1 Sweet Potato

Olive Oil

Feast Seasoning Rock'n Garlic (can sub for garlic powder)

1 Lemon





Start by cutting your Broccoli into florets then set aside.  Cut your Zucchini in half then cut into thirds length wise.  Peel your Sweet potato and cut into strips length wise then cut into pieces.  Peel your Carrots then cut in half and into thirds. (Use my picture as reference for how the veggies should look.)

 Add all of your veggies to a sheet pan and drizzle with Oil then sprinkle with Salt, Pepper, feast Rock'n Garlic, and squeeze half a lemon over that.  Mix and then bake at 350 for 30 minutes.  Take out of oven to mix then bake 15-30 minutes longer until the vegetables are to your liking.

Blackened Chicken Strips

Servings 1-2


1 Chicken Breast

Avocado Oil

FlavorGod Everything Spicy Seasoning (could use a blackening seasoning too)


Start off by butterflying your Chicken breast then season nicely with the FlavorGod or any Blackening Spice that you have on hand.  Get a pan and drizzle in some Avocado Oil at medium high heat.  Sear for 5 minutes each side.  make sure chicken is cooked through.
