Honey Balsamic Salmon with Roasted Broccoli and Crispy Shallots

This is one of my super easy go to recipes that i like to make during the week.  The salmon pairs BEAUTIFULLY with the shallots and you can never go wrong with roasted broccoli!  Let's jump in!

INGREDIENTS (SERVINGS 2) 

2 SALMON FILETS SKINLESS

BROCCOLI  (MEDIUM SIZE)

2 SHALLOTS

2 GARLIC CLOVES  

1 LEMON

1/4 CUP BALSAMIC VINAIGRETTE  

1/4 CUP ARROWROOT POWDER (CASSAVA, OR TAPIOCA FLOUR WOULD WORK TOO) 

1/2 TSP RED PEPPER FLAKES

1 TBSP FEAST ROCK'N GARLIC SEASONING (USE GARLIC POWDER IF YOU DON'T HAVE THIS) 

SALT 

PEPPER

 INSTRUCTIONS (SALMON)

START BY MAKING YOUR MARINADE/SAUCE. 

GRAB A BOWL AND ADD IN 1/4 CUP BALSAMIC VINAIGRETTE, 2 TBSP HONEY, 2 Chopped GARLIC CLOVES, 1/2 TSP SALT, 1/4 PEPPER AND THEN GIVE THIS A GOOD MIX.

ADD YOUR SALMON AND LET MARINADE FOR 20 MIN ROOM TEMPATURE.  

WHILE YOU ARE WAITING, PREHEAT YOUR OVEN TO BROIL. ONCE YOUR SALMON IS DONE MARINATING, PLACE ON A SHEET PAN THEN ADD TO THE OVEN AND COOK FOR 8 MIN. 

WHILE SALMON IS IN THE OVEN, ADD THE LEFTOVER MARINADE FROM THE BOWL TO A SMALL POT AND COOK ON MEDIUM HIGH heat UNTIL IT BOILS. ONCE BOILING, REDUCE HEAT TO MEDIUM LOW AND LET simmer FOR 5 MIN. 

INSTRUCTIONS (BROCCOLI) 

CUT YOUR BROCCOLI INTO FLORETS AND THEN CLEAN AND DRY. ADD TO A BIG BOWL THEN DRIZZLE WITH OLIVE OIL UNTIL WELL COATED.  

SPRINKLE WITH 1 TBSP OF THE ROCK'N GARLIC, (OR 1/2 TBSP GARLIC POWDER), 1/4 TSP RED PEPPER FLAKES, 1 TSP SALT, AND 1/2 TSP PEPPER. 

SQUEEZE THE JUICE OF HALF A LEMON THEN GIVE A GOOD MIX AND Add TO A SHEET PAN.  

BAKE AT 400 FOR 15-20 MIN OR UNTIL cooked to YOUR LIKENESS.  

INSTRUCTIONS (CRISPY SHALLOTS

START BY CUTTING YOUR SHALLOTS INTO THIN SLICES THEN BREAK APART THE PIECES LIKE YOU WOULD AN ONION RING. 

ADD THE 1/4 cup ARROWROOT POWDER TO A PLATE THEN DREDGE YOUR SHALLOTS INTO IT, MAKE SURE THEY ARE WELL COATED. 

HEAT A SMALL PAN TO MEDIUM HIGH HEAT THEN ADD IN 2 TBSP OF AVOCADO OIL. ONCE OIL IS HOT, FRY SHALLOTS UNTIL CRISPY ON EACH SIDE. MAKE SURE YOU TURN THEM EVERY MINUTE. THIS WILL ONLY TAKE 3-5 MIN) 

PLATING 

ADD YOUR SALMON TO THE MIDDLE OF THE PLATE THEN ADD SOME BROCCOLI ON EACH SIDE. TOP WITH YOUR CRISPY SHALLOTS AND DRIZZLE WITH THE SAUCE.
