Snow Crab Salad with a Dijon Lemon Vinaigrette

Need a nice healthy appetizer dish recipe to make?  This will be the perfect thing to whip up!  It's nice and refreshing with the fresh tomato and watercress salad.  The crab meat pairs beautifully with the dressing and everything just seems to work!  Hope you enjoy!

RECIPE

Servings 2

Ingredients

1 LB Snow Crab Legs

1 Bunch of Aspargus

1 Lemon

1 Avocado

PKG of Watercress

1 tsp Dijon Mustard

Olive Oil

Butter

tsp Garlic Powder

1 tbsp Cajun Seasoning (Its just to season the water, no worries if you dont have it)

Salt

Pepper

Instructions (crab & vinaigrette)

Start off by making the Vinaigrette: Grab a blender and add in juice of 1/2 lemon, 1 tsp Dijon, 1/4 tsp garlic powder, 1/8 tsp of salt and pepper. Blend on low and slowly drizzle in 2 tbsp of EVOO.  Set this aside.

Now time to make the delicious CRAB! Get a large pot and fill it 3/4 full of water to ensure the crab will be fully covered.  Add in 1 tbsp of Cajun seasoning and the crab legs. Cook for 5 minutes then add to an ice bath to stop the cooking process.

Remove the crab meat from the shells and set aside. (PRO TIP: use scissors to cut open the shells for a super easy process!)

Once you have the crab meat set aside, heat 2 tbsp of butter in a small pot and add in 1/8 tsp of Garlic powder. Once butter is melted at a medium low heat, add in crab and cook for two minutes while stiring to make sure all of the crab meat is coated. (Save this step for last so that the crab will be hot)

INSTRuctions (Salad)

Chop the ends and wash your ASPARAGUS then add to a bowl. Drizzle with olive oil and sprinkle with salt and pepper.

Add to a sheet pan and bake for 10-12 minutes at 425 degrees. If the asparagus is small, only cook for 6-8 minutes. 

once cooked, chop up 10 stalks into one inch pieces and set aside.

Time to get to plating then the most important part...... eating! Grab a bowl and add 1/2 cup of the watercress and the asparagus pieces.

Add 1 tbsp of the dressing and give a nice mix.

Cut the avocado in half then slice into pieces. Plate the avocado pieces then top with two sliced tomato pieces. Add the salad mixture on top then top with the crab meat. Drizzle with a little more dressing then eat up!
