โ€ข Roast at 450ยฐ for 15 min
โ€ข Lower to 350ยฐ, cook 15โ€“20 min until 130ยฐ internal

Here are my top tips to reverse searing a steak:
โ€ข Use a meat tenderizer to ensure optimal texture and salt absorption
โ€ข Salt both sides + wire rack overnight for the best crust
โ€ข Bake at 250ยฐ until the internal temp hits 120ยฐ
โ€ข Pat dry + sear in a hot pan with avocado oil, flipping often until it reaches 130โ€“135ยฐ for a nice medium-rare
โ€ข Rest 10 minutes, then slice

VAMPIREโ€™S BITE COCKTAIL

A dark ruby potion of raspberry Chambord, Pomegranate, and lemon, crowned with champagne and a maraschino cherry. Bubbly, berry, and just a bit deadly - one sip and you might just join the dark side.

Drink recipe:
-1 oz pomegranate juice
-1 oz chambord liqueur 
-1.5 oz vodka 
-.5 oz lemon juice

-shake over ice then pour in cocktail glass. Top with champagne and a cherry. Enjoy!

Salmon Bruschetta Toast
โ€จCrispy sourdough. Lemon ricotta. Seared salmon.โ€จTomato bruschetta and @bertolli_us Dress & Drizz EVOO + Balsamic Glaze.
This new squeeze bottle makes dressing and drizzling so easy.โ€จSimple. Fresh. Full of flavor.
Recipe:
* Sourdough: Brush each side of a thick slice with olive oil. Char in a pan until golden and crispy on both sides.
* Lemon Ricotta: Mix 8 oz full-fat ricotta, zest of 1 small lemon, a squeeze of honey, salt, and pepper. Spread generously on the toast.
* Salmon: Season a salmon filet with salt and pepper. Sear in olive oil until cooked to medium.
* Bruschetta: Combine 6 Roma tomatoes (cored and diced), 1 small minced shallot, 3 minced garlic cloves, a handful of sliced basil, a drizzle of Bertolli EVOO and Balsamic Glaze, salt, and pepper.
* Assemble: Add the lemon ricotta to the charred toast, top with the salmon filet, spoon over the bruschetta, and finish with a drizzle of Bertolli Balsamic Glaze.

High Protein Yogurt Bowl Recipe

Hereโ€™s one of my go-to high protein snacks when Iโ€™m craving something sweet and filling. A paleoish dessert or snack idea that takes minutes to make.

Recipeโ€จ170g full-fat unsweetened Greek yogurtโ€จ1 scoop vanilla @getpaleopro protein powderโ€จ1/2 tbsp maple syrupโ€จSprinkle of sea saltโ€จ2 tbsp pumpkin or sunflower seedsโ€จ1/4 cup walnutsโ€จHandful of blueberries and strawberriesโ€จSmall handful of dark chocolate chips
How to make it:โ€จMix the yogurt with maple syrup, then stir in the protein powder and sea salt. Add all your toppings and itโ€™s ready to eat.
