Paleo Korean Beef Bowls with a Kimchi Aioli

I’ve been super into creating easy one pan dinners these days! This one comes together quick and tastes delicious with cauliflower rice or regular rice. Throw in whatever vegetables you want to the bowl as well and it will be a hit! I also made a super tasty Kimchi Aioli that brings the dish together! Let’s get to cooking!

The Sauce

I wanted to create a delicious sauce for the meat that had a nice balance of sweetness and spice. Some Korean food staples are Sesame oil, Soy Sauce, Kimchi, Ginger, Garlic, and Chilis. I decided to do one sauce to flavor the beef then made a Kimchi Aioli to top the dish with.

The first sauce consisted of:

  • 1/2 cup coconut aminos
  • 1 tbsp honey
  • 1 tbsp brown monk fruit sugar
  • 2 tsp sesame oil
  • 1 1/2 tsp sriracha
  • 1 tsp rice wine vinegar

You will start off by mixing these ingredients in a bowl then setting them aside.

Now lets chat Kimchi Aioli! My best friend is Korean and I was lucky enough to grow up on Kimchi. It is so damn delicious and super healthy as well for your gut health so its a double win! You can’t have Korean food without Kimchi so I knew I wanted to create a fun sauce to drizzle on top. This one turned out tasty and its super easy to prepare!

Kimchi Aioli Steps

Grab a small blender and add in:

  • 1/3 cup paleo mayo
  • 1/4 cup kimchi
  • 1 tsp sesame oil
  • 1 tbsp honey

Blend this up until everything is combined. Drizzle on top of the dish!

Korean Ground Beef Steps

Now that we got our sauces prepped, let’s get this Korean ground beef prepared.

Start off by prepping your garlic and ginger. I used 3 large garlic cloves and gave those a nice fine dice. Then I chopped up some ginger so that I could get 1 tbsp amount.

I then cut up 3 large carrots in a matchstick style. Start off by peeling the carrots then cut them in 3rds. You will then very carefully slice each piece lengthwise one or two times depending how thick they are. Then cut those pieces into thin slices. Use the picture for reference. I love cutting them this way for sautés since they cook up so nice!

Also thinly slice halve a sweet onion and set aside. Time to grab a large sauté pan and lets get to work.

Get the pan on medium high heat and add in a little avocado oil. Brown 2 lbs of ground beef and once browned, remove from pan and drain the fat. Add in a little more avocado oil and add in the carrot and onion. Season with a nice pinch of salt, pepper, and garlic powder. Cook for 8 min.

Remove from pan and add to the same bowl you put the beef in. Add in a little more avocado oil and reduce heat to medium. Add in the ginger and garlic. Cook for 1 minute. Add in the sauce and stir for 1-2 minutes. Add the beef and carrot/onion mixture back to the pan and mix up. Add in a slurry consisting of mixing up 1 tsp potato starch + 1 tsp water in a small bowl. Stir for an additional 1-2 minutes and drop heat to low. Let this simmer for a bit and it will begin to thicken. That’s a wrap!

Serve this with some green beans and cauliflower rice for a delicious Paleo Bowl! Throw an egg on top if you are getting a little crazy and living your best life! Top with that delicious Kimchi Aioli and get ready to sit back and enjoy this tasty easy dinner!

Description

This one pan Paleo Korean Ground Beef dish will be your new favorite meal! Serve with some vegetables and Cauliflower Rice and top with the delicious Kimchi Aioli!


Ingredients

Scale

KIMCHI AIOLI:

  • 1/3 cup paleo mayo
  • 1/4 cup kimchi
  • 1 tbsp honey
  • 1 tsp sesame oil

KOREAN GROUND BEEF:

  • 2 lbs ground beef, I used grass-fed
  • 3 carrots, cut matchstick style
  • 1/2 small sweet onion, thinly sliced
  • 3 large garlic cloves, finely diced
  • 1 tbsp ginger, finely diced
  • 1 tsp potato starch + 1 tsp water, mix in small bowl

KOREAN GROUND BEEF SAUCE:

  • 1/2 cup coconut aminos
  • 1 tbsp honey
  • 1 tbsp brown monk fruit sugar
  • 2 tsp sesame oil
  • 1 1/2 tsp sriracha
  • 1 tsp rice wine vinegar

Instructions

KIMCHI AIOLI:

  1. Add all ingredients to a small blender and blend until smooth. Set aside.

KOREAN GROUND BEEF:

  1. Start off by adding all of the sauce ingredients to a bowl and mix until combined. Set aside.  Prep your slurry by adding the potato starch and water to a bowl and stir until combined. Set aside.
  2. Grab a 12″ sauté pan and get on medium high heat. Add in a drizzle of avocado oil and brown 2 lbs of ground beef.  Season meat with a nice sprinkle of salt and pepper. Once browned, remove from pan and drain the fat from the pan. Add in a little more avocado oil and add in the carrot and onion. Season with a nice pinch of salt, pepper, and garlic powder. Sauté for 8 min. Remove vegetables from pan and set aside.
  3. Add in a little more avocado oil and reduce heat to medium. Add in the ginger and garlic. Cook for 1 minute. Add in the sauce and stir for 1-2 minutes. Add the beef and carrot/onion mixture back to the pan and mix up. Add in the slurry and stir for an additional 1-2 minutes and drop heat to low. Let this simmer for a bit and it will begin to thicken. That’s a wrap! Top with the kimchi aioli and enjoy!

Notes

Serve this with cauliflower rice or regular rice for Paleoish.

Topping Ideas: A fried egg would be delicious

High Protein Peanut Butter Chocolate Yogurt Bowls 

Ingredients:
• Greek yogurt
• protein powder
• cocoa powder
• peanut butter
• maple syrup
• sea salt

Topped with:
• strawberries
• banana
• hemp seeds
• cacao nibs

Steps:

1. Add yogurt + protein powder to a bowl
2. Blend with an immersion blender until smooth and whipped
3. Mix in cocoa powder, peanut butter, maple syrup, and sea salt
4. Top with fruit, hemp seeds, and cacao nibs

Perfect high protein breakfast or snack.

This elk rack from @firstlight.farm hit the spot.

Here’s how I cooked it up:
• Avocado oil, salt + pepper
• Roast at 450° for 15 min
• Lower to 350°, cook 15–20 min until 130° internal
• Rest 15 min, slice and enjoy

Here are my top tips to reverse searing a steak:
• Use a meat tenderizer to ensure optimal texture and salt absorption
• Salt both sides + wire rack overnight for the best crust
• Bake at 250° until the internal temp hits 120°
• Pat dry + sear in a hot pan with avocado oil, flipping often until it reaches 130–135° for a nice medium-rare
• Rest 10 minutes, then slice

My Famous Bourbon Mushroom Cream Sauce

VAMPIRE’S BITE COCKTAIL

A dark ruby potion of raspberry Chambord, Pomegranate, and lemon, crowned with champagne and a maraschino cherry. Bubbly, berry, and just a bit deadly - one sip and you might just join the dark side.

Drink recipe:
-1 oz pomegranate juice
-1 oz chambord liqueur 
-1.5 oz vodka 
-.5 oz lemon juice

-shake over ice then pour in cocktail glass. Top with champagne and a cherry. Enjoy!

Finally tried @trulypizza in Dana Point and it lived up to the hype! They ferment the crust so it has a sourdough light and airy vibe to it, but is super crispy and delicious. Highly recommend this spot!
