Paleoish Chicken Cordon Bleu

Chicken stuffed with delicious Swiss cheese and Ham. Rolled in a paleo breading mixture then pan fried to crispy perfection. Served with a tasty creamy mustard sauce. Need I say more?

I am a sucker for Chicken Cordon Bleu! How could you go wrong with Ham and Swiss cheese? It adds such a nice dimension to the Chicken! I cleaned this dish up by rolling the chicken in some potato starch instead of flour and used ground up paleo pork rinds for the “bread crumb.”

Chicken Cordon Bleu Stuffing

I used two pounds of chicken breast for this recipe. I also picked up some super high quality Swiss cheese. When I ish it up, I like to go high quality and something where the ingredients are clean even though it’s not paleo. I went with some Applegate Ham since they make a super high quality product with clean ingredients.

Steps to Making Chicken Cordon Bleu

You want to start off by cutting the tenderloins off the chicken breasts. Then butterfly the chicken breasts and cut in half. Pro tip: you could also just buy the thin cut chicken breasts and pound those out if need be.

I like to sandwich the chicken breasts in between two layers of plastic wrap. Pound out with a meat hammer until thin ensuring you don’t tear through the chicken.

That is what you want to see right there! Now we are going to stuff these babies.

I like to fold up one piece of ham lengthwise and add that down then cut the cheese slices in half then half again. You are going to want to roll this and ensure you tuck the cheese and ham in so the chicken is on the outside.

It should look like this. Make sure you have some wood toothpicks and poke them through the middle so that its holding the chicken in place. Use one toothpick on each side so that they stay together.

The Breading Station

My station consisted of:

1/2 cup potato starch

2 eggs beaten

2 cups ground up pork rinds

Season the chicken both sides with salt and pepper then roll in the potato starch. Make sure to dust off the excess then roll in the egg. Add to the pork breading and get a nice coating on the pork. Set aside then we will cook these babies up!

Now is the easy part. All you have to do is pan fry them in some avocado oil and butter for a few minutes each side. Then bake them off at 350 for 20 minutes or until an internal temperature of 165 degrees. While this is cooking you could work on a creamy mustard pan sauce! I made one using some shallot, chicken bone broth, cassava flour, almond cream, chicken base, dijon mustard, and some butter.

Here is the finished product!

Serve with your favorite sides and dig in! Really hope you guys love this one!

Ingredients

Chicken Cordon Bleu Ingredients 

  • 2 lbs chicken breast
  • 1 package sliced Swiss cheese
  • 1 package ham of your choice, I used Applegate
  • 2 cups ground up pork rinds, I like 4505 brand
  • 2 eggs, beaten
  • 1/2 cup potato starch
  • salt
  • pepper
  • toothpicks to hold the chicken together

Creamy Mustard Sauce Ingredients 

  • 1 shallot, minced
  • 1 cup unsweetened almond cream, I used nut pods
  • 1/3 cup white wine
  • 1/3 cup chicken bone broth
  • 1/3 cup grated parmesan cheese
  • 2 tbsp dijon mustard
  • 1 tbsp butter
  • 1 tbsp cassava flour
  • 2 tsp chicken base, I used better than bouillon

Instructions

Chicken Cordon Bleu Steps

  1. Preheat oven to 350 degrees.
  2. Start off by cutting the tenderloins off the chicken breasts. Then butterfly the chicken breasts and cut in half. Pro tip: you could also just buy the thin cut chicken breasts and pound those out if need be. Now cover with plastic wrap and pound out thin. We aren’t using the tenderloins for this so you could use those for a salad or chicken fingers.
  3. Now season the chicken breast pieces with salt and pepper each side. Fold a piece of ham and add it lengthwise.  Cut a piece of Swiss cheese in half then half again and add those pieces to the middle. Roll the chicken and ensure the ham and cheese are fully stuffed inside.  Stick with 2 toothpicks through the middle to hold them together.  Reference above pictures.
  4. Build your breading station by adding the 1/2 cup potato starch to a plate.  Add the 2 cups pork breading to a plate and whisk the 2 eggs in a shallow bowl.  Now roll the Chicken one at a time in the potato starch shaking off the excess.  Dip in the egg both sides then roll in the pork breading so that it has a nice layer. Add to a tray and set aside.
  5. Grab a 12 inch non stick pan and get it on medium high heat.  Once hot, add in 2 tbsp Avocado oil and 1/2 tbsp butter and let melt.  Add your Chicken, working in batches so that you don’t overcrowd the pan.  Pan fry for 2 minutes each side then remove.  Add more oil and butter as you do the next batch.  Put the pan fried chicken pieces in a glass baking dish.  Bake at 350 for 20 minutes or until internal temp reaches 165 degrees.
  6. Let rest then remove the toothpicks and slice into pieces and spoon sauce over.

Creamy Mustard Sauce Steps

  1. Grab a few papertowels and clean out the pan you fried the chicken in.  Add in 1 tbsp olive oil and get it on medium heat.  Add in the minced shallot and sauté for 2-3 minutes. Now add in the 1 tbsp cassava flour with 1 tbsp of butter.  Whisk this for 1-2 minutes to brown it a bit.
  2. Slowly whisk in the wine then slowly whisk in the almond cream then the bone broth. This should begin to thicken. Once it does, drop the heat to low. Add in the chicken base and the mustard and whisk in.  Sprinkle in the parmesan and whisk in until combined.  Drop in 1 tbsp of butter and whisk until melted and smooth.  Sprinkle with a little salt and pepper then spoon over the chicken.

High Protein Yogurt Bowl Recipe

Here’s one of my go-to high protein snacks when I’m craving something sweet and filling. A paleoish dessert or snack idea that takes minutes to make.

Recipe
170g full-fat unsweetened Greek yogurt
1 scoop vanilla @getpaleopro protein powder
1/2 tbsp maple syrup
Sprinkle of sea salt
2 tbsp pumpkin or sunflower seeds
1/4 cup walnuts
Handful of blueberries and strawberries
Small handful of dark chocolate chips
How to make it:
Mix the yogurt with maple syrup, then stir in the protein powder and sea salt. Add all your toppings and it’s ready to eat.

CHOCOLATE PEANUT BUTTER CUP PROTEIN SHAKE

Yeah, you could mix your protein powder with milk and stir. OR you could add a little oomph—both in flavor and substance. I love to mix recipes like this into my routine and @purist_nutrition whey protein powder seriously levels up the ingredient quality on this one.

RECIPE BELOW:

Ingredients:
* 1 scoop Purist chocolate protein powder
* 7 frozen banana slices
* ½ ripe banana
* ¼ cup unsweetened Greek yogurt
* 2 tbsp natural peanut butter
* 1 tbsp cacao powder
* ½ tsp vanilla extract
* 1 tbsp maple syrup
* ½ cup unsweetened almond milk
* Pinch of sea salt
* ⅛ tsp ground cinnamon
* Handful of ice

STEPS:

1. Add all ingredients to a blender and blend until smooth.
2. Pour into a glass and enjoy

RIBEYE PHILLY CHEESESTEAK SANDWICH 

INGREDIENTS:
– 1 ribeye steak
– ½ sweet onion, chopped
– 1 green bell pepper, thinly sliced
– 1 pack white button mushrooms, sliced
– 3 slices provolone cheese
– Roll or bread of choice (I used homemade sesame sourdough loaf)
– Avocado oil
– Mayo (for the bread)

SEASONING:
– Salt
– Pepper
– Garlic powder
– Onion powder

INSTRUCTIONS:
1. PREP THE RIBEYE
Freeze steak for 45 minutes so it’s easier to slice.
Trim the fatcap (save those pieces), then slice the steak super thin. Set aside in a bowl.

2. SAUTÉ THE VEGGIES
Heat a griddle over medium-high.
Add a little avocado oil and sauté onion, mushrooms, and green pepper.
Season with salt, pepper, garlic powder.
Cook 4–6 min until veggies are browned and onions are translucent. Push to the side.

3. RENDER FAT & COOK STEAK
Add trimmed fat to the griddle and let it render.
Once some fat is down, add the ribeye slices. Press down for a good sear.
Season with salt, pepper, garlic + onion powder.
Flip, toss, and chop with two spatulas until fully browned.

4. BRING IT TOGETHER
Toss steak with the cooked veggies.
Shape into the size of your roll and top with 3 slices provolone.
Let the cheese melt while you toast your bread with mayo on both sides.

5. BUILD THE SANDWICH
Add the cheesy ribeye mix to your toasted bread.
Slice it up and watch people go quiet after the first bite.

CAKE BATTER PROTEIN BALLS
 
This recipe is incredibly delightful—and a perfect candidate for making with your kids on a rainy day. Thanks to @purist_nutrition for the Whey Protein Isolate powder. This stuff only has four ingredients, including grass-fed dairy, so I know it’ll make for a high-quality recipe.

RECIPE BELOW

* ½ cup Purist vanilla protein powder
* ½ cup cashew butter, softened
* ½ cup crunchy peanut butter, softened
* ¾ cup powdered sugar (or 2/3 cup powdered monk fruit for sugar-free)
* ¼ cup dark chocolate chips
* ¼ cup unsweetened almond milk
* ½ tsp vanilla extract
* ⅛ tsp almond extract
* ⅛ tsp sea salt
* Sprinkles, for coating
* Neutral oil (like avocado oil), for rolling

Instructions:
1. Mix the Base:
In a large mixing bowl, combine all ingredients except sprinkles and oil. Mix until well combined and smooth.
2. Chill:
Place the bowl in the refrigerator for 30 minutes to allow the mixture to firm up.
3. Shape the Balls:
Remove from the fridge. Line a baking sheet with parchment paper. Lightly coat your hands with avocado or other neutral oil. Using a meatball scooper or your hands, scoop golf ball–sized portions and roll into balls. You should get about 8 balls.
4. Set Again:
Place the shaped balls back in the fridge for another 30 minutes to cool.
5. Add the Sprinkles:
Fill a small bowl with sprinkles. One by one, roll the balls in the sprinkles, gently pressing them in as you go. Finish by reshaping the balls as needed.
Store & Enjoy:
Keep the balls stored in the fridge in an airtight container. Enjoy cold!
