Paleo Crispy Pork Carnitas

Who doesn’t love delicious crispy melt in your mouth carnitas? I know I sure do and this recipe will be a guaranteed crowd pleaser! It has minimal steps and will have your place smelling amazing when they are slow cooking for 8 hours! Use it in some tacos, burrito bowls, or simply picking it up with your fingers and shoveling it in your mouth!

Description

These melt in your mouth paleo carnitas will make you cry tears of joy!  I like to broil them off to get them a little crispy then serve them in some tacos or eat as is.


Ingredients

Scale

Spice Mix

  • 1 tbsp salt
  • 1 tbsp chili powder
  • 1 tsp ancho chipotle powder
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp cumin
  • 1/2 tsp coriander

Carnitas

  • 3–4 lb pork shoulder
  • 2 cups pineapple juice
  • 1 white onion, sliced in quarters
  • 1 jalapeno, sliced in thin pieces
  • 2 naval oranges, cut in half
  • 2 limes, cut in half
  • 1 bay leaf
  • avocado oil

Kitchen Tools Needed

  • 6–8 quart crockpot, preferred method of cooking
  • Large dutch oven works as well. see recipe notes.

Instructions

Spice Mix Steps

  1. Grab a small bowl and add all of the spices into it.  Mix well with a spoon then set aside.

Carnitas Steps

  1. Cut your pork shoulder into big chunks. Drizzle the pork chunks with a little avocado oil and massage with hands to ensure all sides are coated.
  2. season all chunks evenly on all sides with the spice mix.
  3. heat up large pan with a little Avocado oil on medium high heat.  Once hot, sear the pork pieces for a few minutes on each side.  make sure to hit all of the sides.  Work in batches so that you don’t overcrowd the pan. Once all of the pieces are seared, add to a plate and set aside.
  4. Grab your large crockpot and add a few pieces of the onion at the bottom.  Layer in your pork pieces then squeeze the limes and oranges on top of the meat.  Mix up and make sure you leave the squeezed oranges and limes in the crockpot putting a few at the sides and top of the pork pieces. layer the rest of the onion and add in the jalapeño slices.
  5. pour in the pineapple juice and top with a bay leaf.
  6. cover and cook on low for 8 hours.
  7. grab a sheet tray and cover with tinfoil. Using tongs, add the cooked pork pieces to the tray and shred with two forks. Pour a few spoonfuls of the juice in the crockpot over the carnitas and mix up then spread in an even layer on the tray.
  8. Set oven to broil on high and have the rack at the very top.  Broil pork for 3-6 minutes watching closely since this step happens quick!
  9. Remove from oven when you have your desired crispiness then enjoy!  Just be ready since this is some addicting stuff!

Notes

If you don’t have a crock pot, you can use a large dutch oven.  Follow all of the same steps then add your dutch oven to the middle rack in the oven at 225 degrees and cook for 6-8 hours.

Here’s what you should do with leftover vegetables or vegetables in general. Make a vegetable Frittata that will put a big smile right on that sexy face of yours.

Usual plan of attack:
12 inch non stick pan (I use @madein)
8 eggs, beaten
Handful of shredded cheddar
Handful of Parmigiano Reggiano
1/4 sweet onion diced

Vegetables: use what you have. Tip is to sauté one at a time to ensure proper browning and to make sure you don’t have extra liquid from the vegetables in the pan when you add in the eggs.

Use meat of your choice. Bacon or ham would be delicious as well. 

Add in eggs and swirl a bit so that it’s incorporated into the vegetables but don’t cook them. Throw the pan in the oven at 375 for 20-30 min after topping with the cheese.

Here’s how to make the Ultimate Skinny Margarita

Happy Thirsty Thursday! I partnered with @dulcevidatequila to bring you this super tasty and clean margarita #ad.  It’s nice and refreshing with the fresh lime juice and just a hint of sweetness from the honey syrup comes through allowing you to taste the delicious reposado tequila. 

Recipe is below:

2 oz @dulcevidatequila reposado tequila
1 1/2 oz fresh lime juice
1 oz orange liqueur
3/4 oz honey syrup
Few dashes of fee foam

Add ingredients to a cocktail shaker with ice and shake up. Pour over a chilled glass and enjoy!

EASY CHICKEN NACHOS RECIPE 🍗 🧀 

I partnered up with @goodfoods to bring you these delicious chicken nachos topped with their tasty guacamole that will be perfect for the Superbowl!  We use a rotisserie chicken so it comes together in no time and the homemade pickled onions and jalapeno take these nachos over the top!  You can’t skimp on the delicious good foods guacamole that ties it all together!  Hope you guys enjoy and have a great Superbowl!

RECIPE:

INGREDIENTS:

1 rotisserie chicken, shredded
Big bag of tortilla chips
15 oz jar of salsa
@goodfoods guacamole
1 lb cheddar cheese, shredded
1 lb Monterey jack cheese, shredded
Can of black olives, sliced
1 roma tomatoes, diced
Sour cream
Green onion, sliced

Pickled Onion and Jalapeno Ingredients:

2 jalapeños, sliced
1 red onion, sliced
1 cup white vinegar
1 cup water
1 tbsp honey
1 tsp salt, diamond kosher
1/2 tsp black peppercorn

STEPS:

Start off by shredding the rotisserie chicken and add to a bowl.  Pour salsa over chicken and toss so that all of the chicken is coated with the salsa.  Shred both cheeses and mix up in a bowl.

Grab a cast iron pan or sheet tray and do a nice layer of the chips.  Add on a nice layer of the cheese and then the chicken.  Repeat until you get to the top of the pan.  Bake at 350 for 7-10 minutes.  You want the cheese to get nice and melted.  I like to finish over a broiler set to high for 1-2 minutes. 

Top the nachos with some pickled onion, pickled jalapeño, scallion, tomato, black olive, sour cream, and some healthy dollops of good foods guacamole.

Pickled Onion and Jalapeño Steps:

Grab a small sauce pan and add in the vinegar, water, salt, peppercorn, and honey.  Bring to a simmer.  Add the sliced jalapeño and onion to an air tight container and pour over the pickling liquid once simmering.  Add to the fridge for a few hours, shaking a few times.

Miso Black Cod Recipe 

This Nobu style Miso Black Cod is to die for! Shout out to @ocwildseafood for the delicious seafood. Recipe is below.

Ingredients:
2 lbs black cod, cut into small filets
1/4 cup sake
1/4 cup mirin
2 tbsp monk fruit sugar

STEPS:
Cut the fish into filets and add to a large Tupperware container. Get a small pan and add in the marinade ingredients. Let this come to a simmer then cook for 20-30 minutes until a caramel texture forms. Remove from heat and let cool.

Add to fish and use your hands to ensure every piece is coated. Marinade overnight then let the fish come to room temp for 30-60 min on the counter. Broil on high (top shelf) for 4-6 min. Remove with oven and sprinkle with salt. Serve with Bok Choy or your favorite vegetable and enjoy!

Make this Homemade Gyro Pita Bite with @goodfoods Feta Cucumber Tzatziki dip for your next Holiday party!

This is such a fun appetizer that will be something different at the table! I love the layers of flavor you get from the crunchy pita, crispy gyro, tomato, and delicious @goodfoods Tzatziki dip. Check out the recipe below and hope you enjoy!  Happy Holidays!

Gyro Meat:

1 lb ground beef
1 lb ground lamb
1 red onion, roughly chopped
6 garlic cloves, roughly chopped
1 tbsp salt
2 tsp oregano
1 1/2 tsp cumin
1 tsp smoked paprika
1 tsp rosemary
1 tsp pepper
1/2 tsp thyme
1/2 tsp garlic powder
1/8 tsp cayenne pepper
1/8 tsp cinnamon

Pita and Toppings:
@goodfoods Feta Cucumber Tzatziki Dip
pkg of small pita, cut in half
2 vine ripened tomatoes, thinly sliced
olive oil
salt
garlic powder

STEPS:

Add your roughly chopped onion and garlic to a food processor and pulse until it’s finely chopped. Add to paper towels to squeeze out the moisture. Set aside.
Add the lamb and ground beef to a bowl and throw the seasonings in.  Mix up and add to the food processor to pulse.  You want this to be a smooth consistency. Add in the onion mixture and pulse again.
Grab a 8x8 baking dish or bread loaf dish.  Grease and add in the gyro meat and push down so it’s an even layer.  Bake at 375 for 30-40 minutes.  You want this to have an internal temp of 160.  Let fully cool before slicing.
Slice gyro into thin pieces and pan sear in some olive oil for 1-2 minutes per side to get each side crispy. 

Slice your pita bread in half and add pieces to a baking sheet.  Drizzle with Olive oil and season with salt and garlic powder on both sides.  Ensure both sides are coated in the olive oil. Bake at 400 degrees for 5 minutes.  Flip and bake for another 2-3 minutes until they start to get a little crispy and browned.

Add a nice layer of the @goodfoods Tzatziki dip on the bottom of the pita.  Top with a tomato slice and a gyro slice. Drizzle on a little more Tzatziki on top then enjoy!
