Paleo Beef & Broccoli Stir Fry
There is nothing better than a classic Beef & Broccoli Stir Fry! This literally has the same vibes of one that you would get at a legit Chinese restaurant! I also used NY Strip for the steak so the meat was super lean and flavorful! I served it over Cauliflower Rice and topped it with an egg one of the nights and it was a game changer! Hope you guys love it!
PALEO BEEF & BROCCOLI STIR FRY
1 lb NY Strip Steak
2 Broccoli Heads
2 Red Peppers
1 Small Yellow Onion
Garlic 3 cloves
Salt & Pepper
1/3 Cup Coconut Aminos
2 tbsp Honey
1 tbsp Ketchup
1 tbsp Sriracha
1 tsp Sesame Oil
1 tsp Grated Ginger
Arrowroot Slurry (2 tsp Arrowroot, 1 tbsp Water. whisk up)
Start off by freezing your steak for 30 minutes. This makes it way easier to slice the meat thin.
Once 30 minutes is up, slice super thin then set the pieces aside and let them come to room temperature for 20-30 min.
Now slice the red peppers and do a large dice. Also do a large dice on the onion.
Cut your Broccoli into small florets and cut around the stalk and dice that up too (Its so delicious)
Blanch your Broccoli. (Add to pot of boiling salted water and stir and cook for 5 minutes.
Drain the Broccoli and rinse with cold water. This will stop the cooking process and will keep the bright green color.
Use a whisk and combine the sauce ingredients in a bowl. Leave the slurry in a different bowl and set aside.
Now time to do some cooking! Grab a 4 qt Dutch Oven or large pan and get on medium high heat.
Add a little Olive Oil then add in the Onion and Peppers. Season with Salt and Pepper then stir. Cook for about 5-7 minutes.
Remove from pan then add in a little more oil then add your meat in batches and let sear. Once browned on each side (only takes 1-2 minutes per side) remove from pan and season the meat with salt and pepper.
Now add the Broccoli to the pan with a little oil and season with salt. Add the Pepper/Onions, and Meat and stir up. Set on low heat and get cracking on the sauce.
Grab a small pot and heat up on medium.
Add a little oil then put in your 3 minced garlic cloves and cook for 1-2 minutes. Now add the sauce mixture to the pot. Let it come to a simmer and once it starts to thicken, add in 1/3 cup water. Mix up and let come to a simmer again.
Once it starts to thicken again, slowly drizzle in the slurry and whisk into the sauce. Reduce heat to low and keep whisking until it thickens. I added in 1 tbsp of water to thin it out a bit and it was a perfect consistency!
Now pour the sauce over the stir fry and you are good to! Mix it up and top over some Cauliflower rice for a tasty dinner!
Grab a large tray and top with parchment paper.
Add your Cauliflower rice to the tray (I used a 16 oz package) and drizzle with Olive Oil and season with Salt, Garlic Powder, and white pepper.
Mix up then bake middle shelf at 400 for 10 minutes. Remove from oven and mix up, then bake for an additional 10 minutes.
Add some rice to the plate then top with the stir fry! You could also throw an egg on top if you are feeling a little crazy.
