Paleo Beef & Broccoli Stir Fry

There is nothing better than a classic Beef & Broccoli Stir Fry! This literally has the same vibes of one that you would get at a legit Chinese restaurant! I also used NY Strip for the steak so the meat was super lean and flavorful! I served it over Cauliflower Rice and topped it with an egg one of the nights and it was a game changer! Hope you guys love it!

Paleo Beef and Broccoli Stir Fry

Description

Skip the takeout and make this super tender and healthy version of Beef and Broccoli.  This comes together super quick and the New York Strip takes this dish to the next level!


Ingredients

Scale

Sauce Ingredients:

  • 1/3 cup coconut aminos
  • 2 tbsp honey
  • 1 tbsp kethcup
  • 1 tbsp sriracha
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 2 tsp arrowroot starch

Dish Ingredients:

  • 1 lb ny strip steak, sliced in thin pieces
  • 2 broccoli heads, cut into florets and peel and slice the stalk into pieces
  • 2 red peppers, large dice
  • 1 small yellow onion, large dice
  • 3 garlic cloves, minced
  • Olive Oil

Instructions

  1. Start off by freezing the steak for 30 minutes.  This makes it way easier to slice the meat thin. Now slice the steak into super thin pieces and add to a bowl. Set aside and let this come to room temperature for 30 minutes.
  2. Blanch your broccoli by adding it to a pot of boiling salted water and cook for 5 minutes stirring often.  Drain the broccoli and rinse with cold water to stop the cooking process.  Pat dry and set aside.
  3. Add your sauce ingredients to a bowl and whisk until combined. Set aside.
  4. Add your slurry ingredients to a small bowl and whisk until combined. Set aside.
  5. Grab a large dutch oven or large pan and put on medium high heat. Add in a drizzle of olive oil and once hot, throw in the peppers and onion. Season with a nice sprinkle of salt and pepper and cook for 5-7 minutes stirring often. Remove from pan and set aside.
  6. Add in a drizzle of olive oil and once hot sear your steak for 1-2 minutes working in batches so that you dont overcrowd the pan.  Add your steak to a plate and set aside.  Sprinkle with some salt and pepper.
  7. Reduce heat to medium and add in a drizzle of olive oil. Throw in your garlic and cook for 1-2 minutes. Add in your sauce mixture and let this come to a simmer stirring often. Once it starts to thicken, add in 1/3 cup water.  Mix up and let this come to a simmer again. 
  8. Once it starts to thicken again, slowly drizzle in the slurry while whisking. drop heat to low and keep whisking.  If this gets too thick, add in 1 tbsp of water to thin it out a bit.  Now add in the steak and vegetables back to the pan and give a nice mix.
  9. Let this simmer for a bit so that all of the flavors come together then serve over some Cauliflower rice!

    This doesn’t even take 30 minutes if you simply get a packet of prepared fire-grilled sirloin steak strips from the supermarket and a bag of steam-in-the-bag mixed vegetables. Then it takes closer to 10 minutes, if that.

My Homemade Peanut Butter Chocolate Protein Bars

I’ve been playing around with a healthier protein bar option and am very happy with how these turned out.

Each bar packs about 22 grams of protein, they’re surprisingly filling, and they taste solid.

High Protein Peanut Butter Chocolate Yogurt Bowls 

Ingredients:
• Greek yogurt
• protein powder
• cocoa powder
• peanut butter
• maple syrup
• sea salt

Topped with:
• strawberries
• banana
• hemp seeds
• cacao nibs

Steps:

1. Add yogurt + protein powder to a bowl
2. Blend with an immersion blender until smooth and whipped
3. Mix in cocoa powder, peanut butter, maple syrup, and sea salt
4. Top with fruit, hemp seeds, and cacao nibs

Perfect high protein breakfast or snack.

This elk rack from @firstlight.farm hit the spot.

Here’s how I cooked it up:
• Avocado oil, salt + pepper
• Roast at 450° for 15 min
• Lower to 350°, cook 15–20 min until 130° internal
• Rest 15 min, slice and enjoy

Here are my top tips to reverse searing a steak:
• Use a meat tenderizer to ensure optimal texture and salt absorption
• Salt both sides + wire rack overnight for the best crust
• Bake at 250° until the internal temp hits 120°
• Pat dry + sear in a hot pan with avocado oil, flipping often until it reaches 130–135° for a nice medium-rare
• Rest 10 minutes, then slice

My Famous Bourbon Mushroom Cream Sauce

The sauce that takes any steak to the next level 🥩

Ingredients:
• Olive oil
• Shallot
• Cremini mushrooms

VAMPIRE’S BITE COCKTAIL

A dark ruby potion of raspberry Chambord, Pomegranate, and lemon, crowned with champagne and a maraschino cherry. Bubbly, berry, and just a bit deadly - one sip and you might just join the dark side.

Drink recipe:
-1 oz pomegranate juice
-1 oz chambord liqueur 
-1.5 oz vodka 
-.5 oz lemon juice

-shake over ice then pour in cocktail glass. Top with champagne and a cherry. Enjoy!

Finally tried @trulypizza in Dana Point and it lived up to the hype! They ferment the crust so it has a sourdough light and airy vibe to it, but is super crispy and delicious. Highly recommend this spot!
