Ingredients
- Sourdough Bread Slices (1 loaf)
- Smoked Salmon pkg
- 8 oz cream cheese
- Jar of Cornishons
- Jar of Capers
- Red Onion
- Heirloom Tomato
- Scallions
- Garlic, 2 cloves
- fresh dill, optional
- black pepper
- flaky salt
Instructions
- Toast the bread: Start by toasting your bread slices until they’re golden brown. Let them cool slightly before applying the cream cheese.
- Prepare the cream cheese: While the bread is toasting, let your cream cheese soften at room temperature. Once soft, transfer it to a bowl and smooth it out. Add 1/4 cup of sliced scallions, 2 minced garlic cloves, and a generous sprinkle of salt and pepper. Mix everything together and set aside.
- Poach the eggs: Prepare your poached eggs and place them on a plate lined with paper towels to absorb any excess moisture.
- Prep the toppings: Slice the red onion thinly, cut the tomato into medium-thick slices, and season the tomato with a pinch of salt. Place the tomatoes in the fridge to chill. Slice the cornichons thinly.
- Assemble the toast: Spread a generous layer of the cream cheese mixture on each slice of toasted sourdough. Top with two slices of tomato, followed by a layer of smoked salmon. Sprinkle on the red onion, cornichons, and capers.
- Finish the dish: Add a poached egg on top, and garnish with fresh dill. Finish with a sprinkle of black pepper and flaky sea salt.
