Bacon and Gruyere Egg Bites (Starbucks Copycat Recipe)

Description

We’ve taken a beloved classic, the Starbucks egg bites, and given them a Paleoish twist. These delicious protein-packed bites are ideal for a nourishing breakfast or satisfying snack and do not sacrifice flavor.


Ingredients

Scale
  • 8 eggs
  • 16 oz (1 LB) cottage cheese
  • 1 pkg bacon
  • 1 ¾ cup shredded gruyere cheese
  • 1 ¾ cup shredded monterey jack cheese
  • 1 tbsp butter, melted
  • 1 tsp hot sauce
  • 1 tsp salt
  • ¼ tsp pepper

Instructions

OVEN VERSION

  1. Start by cooking your bacon.  Get a package of bacon.  Add strips to a large sheet tray and space out a bit.  You could use two trays if you need more space. Add to the cold oven and set to 400 degrees.  Set a timer for 16 minutes and monitor the bacon.  Once crispy, remove from the oven and add bacon strips to a paper towel lined plate.  Pour the bacon grease on the tray to a bowl since we will be using this later.  
  2. Grab a high speed blender and add in the 8 cracked eggs, 16 oz cottage cheese, 1 ¾ cup shredded gruyere cheese, 1 ¾ cup shredded monterey jack cheese, 1 tbsp melted butter, 1 tsp hot sauce, 1 tsp salt, and ¼ tsp pepper. Blend up until smooth and set aside.
  3. Preheat your oven to 300 degrees. Grab a muffin tin tray and a roasting pan.  You will set the muffin tin in the roasting tray and add a small layer of water so that it Is just covering a little bit of the bottom of the muffin tin.  Brush the muffin tin with the bacon grease so each one is coated.  Cut up the bacon so that it is in a large bacon bit size.  Add some of the bacon bits to the bottom of the muffin tray. Pour in the egg mixture leaving a little room at the top.  Sprinkle a little more bacon on top then bake in the middle of the oven for 30-35 minutes.  You want the egg bites to set so there shouldn’t be any remaining liquid present.  You could poke one of them with a toothpick and it should come out clean.  
  4. Remove egg bites from the muffin tin and enjoy!  You could cut around with a knife if they get a little stuck.  

SOUS VIDE VERSION

Same exact prep steps as above.  Cooking notes below.

  1. Grab your 4 oz glass mason jars (could hyperlink the mason jars and do the amazon affiliate link there) and brush with the bacon grease.  Add a few bacon bit peaces at the bottom. fill with the egg mixture leaving a little room at the top. Cover tightly with the lids and set aside.
  2. Get a big pot and fill with water.  Set your sous vide (could hyperlink sous vide and put amazon affiliate link there) to 170 degrees.  Once preheated, add the jars with the egg mixture in them to the bottom of the pot.  Cook for 1 1/2 hours.  Check to make sure the mixture is set.  Use a knife to cut around and they should pop out pretty easily.

Each egg cup is 15 grams of protein, making it a perfect protein packed breakfast or snack. These also freeze nicely- pop them in the microwave or air-fryer as you please! Have fun with the toppings and get creative! Makes 15 4oz egg bites.

    Wow, just made this recipe and it’s amazing. I really didn’t expect it to be close to Starbucks but it is. I would definitely substitute this for theirs. Thanks so much for sharing this with us. So easy to make.

    I found this recipe on YouTube and it’s great. Very close to the original and totally worth it. I’m going to make it again today but will try it in larger dishes. I have Gruyère and cheddar but no jack. Will add hatch chilies too.

Here are my top tips to reverse searing a steak:
• Use a meat tenderizer to ensure optimal texture and salt absorption
• Salt both sides + wire rack overnight for the best crust
• Bake at 250° until the internal temp hits 120°
• Pat dry + sear in a hot pan with avocado oil, flipping often until it reaches 130–135° for a nice medium-rare
• Rest 10 minutes, then slice

My Famous Bourbon Mushroom Cream Sauce

The sauce that takes any steak to the next level 🥩

• Olive oil

VAMPIRE’S BITE COCKTAIL

A dark ruby potion of raspberry Chambord, Pomegranate, and lemon, crowned with champagne and a maraschino cherry. Bubbly, berry, and just a bit deadly - one sip and you might just join the dark side.

Drink recipe:
-1 oz pomegranate juice
-1 oz chambord liqueur 
-1.5 oz vodka 
-.5 oz lemon juice

-shake over ice then pour in cocktail glass. Top with champagne and a cherry. Enjoy!

Salmon Bruschetta Toast

Crispy sourdough. Lemon ricotta. Seared salmon.
Tomato bruschetta and @bertolli_us Dress & Drizz EVOO + Balsamic Glaze.
This new squeeze bottle makes dressing and drizzling so easy.
Simple. Fresh. Full of flavor.
Recipe:
* Sourdough: Brush each side of a thick slice with olive oil. Char in a pan until golden and crispy on both sides.
* Lemon Ricotta: Mix 8 oz full-fat ricotta, zest of 1 small lemon, a squeeze of honey, salt, and pepper. Spread generously on the toast.
* Salmon: Season a salmon filet with salt and pepper. Sear in olive oil until cooked to medium.
* Bruschetta: Combine 6 Roma tomatoes (cored and diced), 1 small minced shallot, 3 minced garlic cloves, a handful of sliced basil, a drizzle of Bertolli EVOO and Balsamic Glaze, salt, and pepper.
* Assemble: Add the lemon ricotta to the charred toast, top with the salmon filet, spoon over the bruschetta, and finish with a drizzle of Bertolli Balsamic Glaze.

High Protein Yogurt Bowl Recipe

Here’s one of my go-to high protein snacks when I’m craving something sweet and filling. A paleoish dessert or snack idea that takes minutes to make.

Recipe
170g full-fat unsweetened Greek yogurt
1 scoop vanilla @getpaleopro protein powder
1/2 tbsp maple syrup
Sprinkle of sea salt
2 tbsp pumpkin or sunflower seeds
1/4 cup walnuts
Handful of blueberries and strawberries
Small handful of dark chocolate chips
How to make it:
Mix the yogurt with maple syrup, then stir in the protein powder and sea salt. Add all your toppings and it’s ready to eat.
