One of the biggest things I’ve learned through adopting a Paleoish lifestyle is that eating well doesn’t have to mean being perfect. Most days, I focus on whole foods and high-protein meals, but real life is busy and requires some flexibility. That’s where recipes like these no-bake chocolate peanut butter protein bars come in. Whenever possible, I get protein through whole food sources with recipes like my tuna salad, Mexican beef sliders, and sheet tray salmon. However, I don’t always have time to prepare something from scratch or to sit down for a meal.

I’ve searched for store-bought protein bars and found that they’re either full of sugars and additives, crazy expensive, or just don’t taste great. So, I came up with my own version and never looked back!

- Protein Powder: Vanilla whey isolate adds sweetness, flavor, and a serious protein boost. I like whey isolate for the smooth texture and digestibility, but you can experiment with your favorite protein powder. If you’re keeping things fully Paleo, choose a Paleo-friendly protein powder. If you’re embracing a little more “Paleoish” flexibility, any high-quality vanilla protein powder works great.

- Use unsweetened almond milk or coconut milk.
Keep It Paleoish
- Use your favorite vanilla whey isolate protein powder. Plant-based protein also works if needed. Just keep in mind that it’s often chalkier. So, you’ll likely need extra milk.
- Stick with natural peanut butter.
- Use whole milk for extra creaminess.
Both versions are delicious. The best choice is the one that works for your goals, your budget, and your lifestyle.
Possible Variations
- Make Them Fully Paleo. Swap the peanut butter for almond butter or cashew butter, use a Paleo-friendly protein powder, and choose a dairy-free milk like almond or coconut milk.
- Use Different Nut Butters. Almond butter, cashew butter, or sunflower seed butter all work well and create slightly different flavors.
- Add Extra Crunch. Mix in chopped almonds, pecans, walnuts, coconut flakes, or cacao nibs for even more texture and healthy fats.
- Chocolate Lover’s Version. Stir a handful of dark chocolate chips into the bar mixture before chilling for double the chocolate goodness.
- Boost the Flavor. Add a teaspoon of cinnamon, a splash of vanilla extract, or a little espresso powder to enhance the chocolate flavor.

How to Make No-Bake Chocolate Peanut Butter Protein Bars
Before you begin, line a square baking pan with parchment paper. I always grease the bottom of the pan with a little avocado oil first to help the paper stick. Then, I leave a little excess hanging over both edges of the pan, creating a parchment paper sling, to make it easy to remove the bars!
- Combine ingredients. Whisk all the dry ingredients except the puffed quinoa in a large bowl. Add the wet ingredients, and mix until a thick dough forms. I start with a spatula, then use my hands (making sure they’re gloved or oiled to prevent sticking) to really incorporate all the ingredients. Gently fold in the puffed quinoa, being careful not to crush it.
- Shape the mixture. Transfer the peanut butter mixture to the prepared pan, pressing it down evenly. Press enough to shape and mold the quinoa mixture but not so much that it becomes dense. The process is similar to making Rice Krispies treats!
- Chill. Place the baking pan in the fridge, allowing the bars to set.
- Add chocolate. Slice the quinoa mixture into bars (I get 8 bars!). Then, melt the chocolate and dip the bars into the mixture.
- Set. Place the bars back in the baking dish, and chill them in the fridge long enough for the chocolate to set.
My Top Tips for the Best Results
- Adjust the milk as needed. Different protein powders absorb moisture differently. If the mixture feels dry or crumbly, add milk 1 tablespoon at a time until a thick dough forms.
- Press firmly into the pan. Really pack the mixture down to help the bars hold together after chilling. A flat measuring cup works great for creating an even layer.
- Use high-quality dark chocolate. Since the chocolate coating is a major flavor component, using a good-quality dark chocolate bar makes a noticeable difference.
- Adjust the chocolate. For a smoother chocolate coating that’s easier to drizzle, stir in a bit of coconut oil when melting.
- Cut after chilling. For the cleanest edges, let the bars chill completely before slicing and wipe your knife clean between cuts if needed.
How to Store
These chocolate peanut butter bars are great for meal prep!
Refrigerator: Store leftover chocolate peanut butter protein bars in an airtight container in the refrigerator for up to 1 week. If stacking multiple bars, place a piece of parchment paper between the layers to prevent them from sticking together.
Freezer: For longer storage, freeze the bars in a freezer-safe container for up to 3 months. I like to wrap them individually before freezing for an easy grab-and-go snack.

- 1 3/4 cups vanilla whey isolate protein powder
- 1/2 tsp Diamond Crystal kosher salt
- 3/4 cup peanut butter
- 1/2 cup maple syrup
- 1/4 cup whole milk + 1 tbsp, plus more as needed
- 1/2 cup puffed quinoa
- 1 (3.5 oz) 70% dark chocolate bar
Instructions
- Line an 8×8-inch pan with parchment paper. Lightly grease the bottom with a little avocado oil before adding the parchment so it stays in place.
- In a large bowl, combine the 1/4 cup coconut flour, 1/4 cup almond flour, 1 3/4 cup protein powder, and 1/2 tsp salt. Mix up.
